TEA's BIBLE

Harvest: Early

Tsuyuhikari

A relatively recent Shizuoka cultivar. Clean-tasting with a bright liquor, and well suited to deep steaming.

Where it came from

Shizuoka 7132 (seed parent) × Asatsuyu (pollen parent), crossed in 1970 by Shizuoka prefecture. The registration application was filed in 2000 and granted in 2003 (No. 11103).

Character

Gentle astringency and a light finish. The liquor pours a bright green, which shows well in a deep-steamed tea. Early — picked before Yabukita.

What it suits

Deep-steamed sencha, for anyone who wants a lighter cup.
